In partnership with the Culinary Historians of Ontario Hannah Glasse was christened in March 1708. To mark the 300th anniversary of the birth of this formidable woman and cookbook-author a group of volunteers, the Historic Cooks of Fort York, will demonstrate some of her excellent recipes on the open hearth and in the brick oven of the 1826 Officers’ Mess Kitchen. These include Very Good Wiggs, Onion Pie, Pupton of Apples, Salmon in Cases, Oxford Pudding, and Jumballs. Then, Fiona Lucas, president of the Culinary Historians of Ontario, and Bridget Wranich, a programme officer at Fort York specializing in food history, will present short illustrated talks on Hannah Glasse, her culinary career, recipes, and three domestic books. Lunch is included, made entirely using recipes from Glasse’s The Art of Cookery Made Plain and Easy. Recipe leaflets will be available for sale.
